This Video Shows Why Consent Should Never Be Confusing

If we let pop culture do the talking, sexual consent is a confusing topic—just give a listen to Robin Thicke’s “Blurred Lines” and Justin Bieber’s “What Do You Mean?” (what do you mean, Biebs?). But the U.K's Thames Valley Police is here to explain that consent is actually a simple concept. And they do so in the most quintessentially British way possible: a video about tea, specifically how you should act after asking someone, “Hey, would you like a cup of tea?” Stepping outside the bedroom and thinking about another everyday conversation (at least for Brits) should eliminate any lingering questions you may have. Plus, the way they say "tea" is a joy unto itself.

31 Healthy, Last-Minute Thanksgiving Side Dish Recipes

It’s T-minus two days to Thanksgiving, and whether you’re spending it with family or enjoying Friendsgiving, showing up empty-handed is simply unacceptable. Not to mention no fun! While turkey tends to be in the spotlight—and we’d never downplay a healthy protein—side dishes are where it’s at on Turkey Day.

It doesn’t matter if you have the luxury of starting the day before, are cooking the morning of, whipping something together before guests arrive, or there are only minutes to spare (tip: Our selected no-cook recipes allow you to buy items at the grocery store on the way over and toss them together when you arrive): There’s still plenty of time to contribute spectacular Brussels sprouts, mouthwatering mashed potatoes, or lip-smacking stuffing. These delicious recipes, sorted by how much time’s left, will have everyone asking for seconds, and they’re perfect for those hosting dinner too.

Dinner's Tomorrow

Sausage, Sage, and Apple Stuffing Photo: Eat Yourself Skinny

1. Sausage, Sage, and Apple Stuffing

Skip the Stovetop (not that there’s anything wrong with that) and make this stuffing instead. Sourdough bread is combined with autumnal flavors like sage and apples for a side dish your family will rave about. While it’s simple to make, there's a good amount of slicing and dicing involved. Prep it the night before, then bake for 45 minutes while your aunt grills you about your love life.

2. Make-Ahead Turkey Gravy

Roasting a turkey is stressful enough without worrying about making the Best. Gravy. Ever. Cue this make-ahead recipe. Using turkey wings ensures you’ll have a tasty, stress-free Thanksgiving. Just reheat in the microwave or on the stove and serve. Tip: Save the wing meat for soups, quesadillas, or any recipe that requires pre-cooked meat, and make extra gravy to freeze for later. (Christmas, anyone?)

3. Makeover Spinach Gratin

Frozen, chopped spinach makes cooking this a snap, while two types of cheese give it the bubbly goodness you want without overwhelming the greens. Split the work into two days: Do the stovetop cooking the day before and keep it covered in the refrigerator until you’re ready to bake for dinner.

4. "Cornbread" and Sausage Stuffing

Even cavemen loved stuffing, right? This Paleo-friendly version starts with grain-free cornbread made with almond and coconut flours, then adds sausage, celery, fresh sage, and spices. Make the bread on Wednesday, assemble the stuffing Thursday morning, and bake.

5. Overnight Refrigerator Rolls

People will think you’re a cooler Martha Stewart when you whip up these homemade rolls. (We won’t spill on how easy they are to prepare.) Mix the dough when you have time and let chill in the fridge until the big day. On Thanksgiving, shape the dough into rolls (or whatever shape your heart desires), and bake. Serve with fresh butter for a melt-in-your-mouth experience.

6. Sweet Potato Casserole

Sweet and creamy sweet potatoes balance crunchy, salty pecans in this fresh take on a casserole fave. Prep this up to two days before Thanksgiving and then pop in the oven for 20 minutes.

7. Cornbread Stuffing

Two Thanksgiving favorites come together in this make-ahead stuffing that’s been "healthified" with whole-grain breads, almonds, and olive oil. With zero out-there ingredients and quick prep work, this is a recipe you can make the evening before. Pull it out of the fridge and bring to room temperature for 30 minutes before baking for an hour.

Dinner's Tonight

Quinoa and Mushroom-Stuffed Butternut Squas Photo: 12 Tomatoes

8. Quinoa and Mushroom-Stuffed Butternut Squash

This twice-baked squash takes some time to prepare, but the sweet, savory, hearty result is totally worth it: We’re talking quinoa, mushrooms, onions, and Parmesan mixed inside of butternut squash—what’s not to love? Give it an extra dash of color by sprinkling fresh basil on the end result for a Pinterest-perfect side.

9. Clean Green Bean Casserole with Parmesan Crumb Topping

No canned cream of mushroom soup in this casserole! Instead, the creamy sauce is a combination of whole-wheat flour, cream cheese, freshly grated Parmesan, mushrooms, and a dash of cream. And don’t fret—there’s still a crispy onion topping!

10. Cranberry Relish

A fresh cranberry sauce that actually moves when it’s served, this recipe requires just four ingredients. Tart cranberries get sweetened up with fresh oranges and apples, plus as much sugar as desired. Prepare the relish in the morning, let it sit at room temperature for 45 minutes, and then keep in the refrigerator until you’re ready to top the turkey.

11. Harvest Rice With Apples and Pecans

This hearty autumn rice is a side that works just as well hot as it does at room temperature. With wild and brown rice, apples, sautéed pecans, onions, and nutmeg—the quintessential fall seasoning—it's sure to please everyone. Tip: Use vegetable broth to make this dish vegetarian-friendly.

12. Crock-Pot Sausage Stuffing

When space is limited for cooking, it’s time to bring out your right-hand man: the slow cooker. This sausage stuffing is assembled in minutes and cooks for the next four hours, freeing up the oven (and time!) for other dishes.

13. Pumpkin Cornbread With Coconut Oil and Cinnamon

Give cornbread an extra fall touch with this pumpkin-spiced version that comes together in minutes: Measure, stir, and pour, then bake and get ready for sweet, seductive smells coming from the oven.

14. Twice-Baked Potato Casserole

Put a new spin on the typical potato side and try this twice-baked casserole instead. After baking the taters solo, cut them and return to the oven stirred together with a healthy dose of cheese and bacon. Do the first bake in the morning and the second right before serving to save time. Tip: Replace the mayo entirely with Greek yogurt for a little extra protein.

Dinner's in 2 Hours

Quinoa Stuffing Photo: Gimme Some Oven

15. Quinoa "Stuffing"

This may not look like traditional stuffing, but it’s delicious and absolutely gorgeous (plus vegan and gluten-free!). And with leafy greens (spinach), nuts (pistachios), fruit (cranberries), healthy carbs (butternut squash), and plant protein (quinoa), it’s also balanced and hearty enough to be a meal—so be sure to keep some leftovers for yourself.

16. Garlic Sweet Potato Mash

With more filling fiber, potassium to help your body properly function, and vitamin A (necessary for immunity, eye healthy, cell growth) per gram compared to white taters, sweet potatoes give this classic a fresh, healthy spin. Just a little butter and light sour cream keeps the calories low and the texture super creamy.

17. Oven-Roasted Brussels Sprouts With Bacon

What can make crispy, roasted sprouts even better? Bacon! This quick and easy side dish requires five ingredients and little hands-on effort: The Brussels and bacon are roasted together until they’re both deliciously caramelized to perfection.

18. Parmesan Garlic Roasted Mushrooms

A mushroom lover’s dream, this elegant side is a breeze to make and insanely good. Toss together mushrooms (buy pre-sliced to make this even simpler), garlic, parsley, and capers—don’t skip the capers, they add loads of flavor—and roast, then top with Parmesan and broil until the cheese reaches the perfect stage of gooeyness. You can prepare the mushrooms whenever and pop them in the oven for 30 minutes when it’s free.

19. Quinoa-Stuffed Acorn Squash

When superfoods unite, the result is amazing flavors that make your body feel amazing too (none of that sluggish, bloated, post-Thanksgiving coma). While the acorn squash is roasting, onions, mushrooms, and other goodies like chickpeas, cranberries, and pumpkin seeds are sautéed and then combined with quinoa. When the squash is ready, stuff those bad boys and serve.

20. Savory Spinach Bites

Perfect as an appetizer or alternative to heavier gratins or casseroles, these bites are made from stuffing mix, frozen spinach, and plenty of cheese—because why not?

21. The Best Damn Vegan Mashed Potatoes

These thick, creamy, fluffy potatoes require zero dairy products. Instead, vegan butter and roasted garlic infuse 'em with smooth flavor. And since they require only six ingredients, they’re easy to scale up for a crowd.

22. Parmesan Roasted Cauliflower

This ridiculously easy (and ridiculously good) recipe turns your favorite cruciferous veg into a tasty Thanksgiving dish. Four ingredients, only 10 minutes prep work, and no measuring! That’s our idea of cooking.

23. Pan-Seared Brussels Sprouts With Cranberries and Pecans

While it’s not as popular as quinoa or most "ancient" grains (and it does contain gluten), barley has almost as much protein and more fiber than quinoa. Add pecans for crunch and healthy fats, cranberries for antioxidants and a touch of tartness, and balsamic vinegar and maple syrup for a sweet and savory drizzle. Oh, and there’s cheese.

24. Basic Cranberry Sauce

This cranberry sauce takes 10 minutes. And when it’s that fast, why settle for something with can ridges on it? It’s cheap too: All you need are fresh berries, sugar, and lemon zest.

25. Honey-Glazed Baby Carrots

Calling all non-cooks: This oven-free side dish doesn’t even require chopping—and it still tastes like it took effort! Melt butter in a pan, add carrots, honey, sugar, and herbs, and stir while it cooks for about 15 minutes. Talk about the perfect lazy person’s Thanksgiving contribution.

26. Microwave-Steamed Garlic Green Beans

Not only do these garlicky green beans take only 7 minutes to make, but they cook entirely in the microwave, freeing up the stovetop and oven for other dishes. Hear that whooshing sound? It's you being super speedy.

Dinner's in 30 Minutes

Sun-Dried Tomato and Goat Cheese Crostini Photo: Culinary Hill

27. Crostini

Traditionally served on toasted bread, crackers make a perfect stand-in for this appetizer you can assemble on site. Pick up whatever toppings appeal, like sun-dried tomato and goat cheese; pesto bocconcini; blue cheese and fig; roasted red pepper hummus; or pesto, radish, and sea salt.

28. Lemony Carrot Salad

Buy shredded carrots to make quick work of this one. You could even bring a bowl with you and toss it together in the car, eyeballing the dressing ingredients and dill, and skipping the scallions if you think things won’t get too messy.

29. Spring Green Salad

This one’s beyond easy: Buy packaged mixed greens of any type, chives, salt, pepper, olive oil, and lemon juice, and mix. If that doesn’t seem like enough for a holiday meal, get some grape or cherry tomatoes (go for yellow ones for presentation points) and crumble pita chips on top.

30. Kale, Radicchio, and Orange Salad

If your friends will let you take up a little space in the kitchen, buy an orange, bagged kale, bagged radicchio, and roasted (or plain) cashews at the store, then toss it together in minutes when you arrive. It’s colorful, and with all the heavy sides, a salad will be a welcome sight on the table.

31. Spinach-Slaw with Red Peppers and Cranberries

Coleslaw mix gets a fall makeover by adding bagged spinach, cranberries, and pine nuts. Pick up a healthy vinaigrette, and feel free to omit the peppers, which means no chopping!

34 Healthier Thanksgiving Recipes

It's that time of year again: Families gather (and bicker), turkeys get browned on the outside and left accidentally frozen on the inside (whoops), gravy ends up a lumpy mess, and cranberry sauce plops loudly from white-labeled cans everywhere. Though we can't promise no bickering, this list can help save your Thanksgiving meal. Here you can find all the recipes you could possibly need to prepare a successful dinner for any size family. Most are our own personal creations, but we've also included some stars from the kitchens of our very awesome recipe contributors too.

On a day when nearly every dish is an indulgence, it's smart to start with something a little greener to fit in those important nutrients and antioxidants. This combo of arugula with crisp and refreshing fennel and apple is the perfect solution. (The balsamic-dijon vinaigrette doesn't hurt either!)

Sides

Maple Roasted Brussels Sprouts Photo: Kelli Dunn 6. Maple Roasted Brussels Sprouts

We can't get enough Brussels sprouts at Greatist. The addition of pancetta and maple make these healthy little guys just the right amount of decadent (without going overboard on the unhealthy stuff).

7. Brussels Sprouts with Brown Butter and Sage

Looking for the perfect turkey pairing? Try these roasted Brussels sprouts topped with earthy brown butter for a delicious addition to any Thanksgiving table.

8. Healthier (Vegan) Creamed Corn

Instead of heavy cream, this version of the classic uses coconut milk to achieve a luscious texture. But it doesn't taste tropical thanks to all the amazing spices.

9. Cranberry-Orange Sauce with Thyme

Repeat after us: No. Canned. Cranberries. Anyone who can boil water can make this recipe sweetened with honey and orange.

10. Basil Cranberry Sauce

For those who prefer an herbal twist on the side, here is the answer. Plus, there's no added sugar; the sauce is sweetened with apple juice.

11. Green Bean Casserole

This classic side dish is typically anything but healthy. However, this version takes out all the bad stuff by swapping in, well, less-than-bad stuff. Grandma will never know the difference.

12. Kale and Butternut Squash Stuffing

Whether you call it stuffing or dressing, no Thanksgiving would be complete without the holiday staple. And this quick and easy recipe is full of unexpected veggies and can be made vegetarian-friendly.

With just three ingredients and less than 20 minutes from start to finish, this roasted asparagus recipe makes one simple, crowd-pleasing dish.

16. Maple and Sage Roasted Squash

It does take some muscle to chop up a butternut squash. This recipe makes it totally worth the workout. Colorful, sweet, and savory, it requires only five ingredients.

17. Hearty Greens with Garlic

We know, we know, greens aren't a "traditional" Thanksgiving dish. But take a chance this year, and pick your favorite leaves to toss with a hearty dose of garlic. They taste great and offer an extra-heavy dose of antioxidants!

18. Apple-Parsnip Mash

Another potato replacement, this inventive take uses apples and parsnips to make a similarly colored dish that's slightly sweet and 100 percent velvety. You may never eat mashed taters again.

19. Honey-Orange Carrots

Carrots are a great source of beta-carotene, but all too often they’re just plain boring. These carrots are a refreshing change, and because they’re roasted, they take little effort so you can spend less time in the kitchen.

Mains

Cranberry Pecan-Stuffed Pork Chops Photo: Kelli Dunn 20. Cranberry Pecan-Stuffed Pork Chops

Not a fan of poultry? Try pork this Thanksgiving. (Yes, you can call it Pork Day if you must.) Plus, the cranberry-pecan stuffing is the bomb.

Taking your first stab at cooking the big bird this year? Don't even try to enter the kitchen without this simple guide.

23. Quinoa and Sweet Potato-Stuffed Mushrooms

These sweet potato and quinoa stuffed mushroom caps are just as filling as a hunk-o'-turkey and can be enjoyed by anyone around the dinner table.

Desserts and Drinks

24. Healthier Pumpkin Chocolate Chip Cookies

Cookies may never be a health food, but whole-wheat flour, flaxseeds, and pumpkin add more fiber, omega-3s, and antioxidants. And they all go fabulously with chocolate chips.

25. No-Bake Pumpkin Custard

With only five ingredients and no oven required, this stress-free dessert tastes just as good as grandma’s pumpkin pie.

26. Quinoa Apple Cake

With a quinoa and apple base, this snack cake is filling enough to kill that dessert craving. And since it's Thanksgiving, go ahead and serve it à la mode!

27. Harvest Fruit Compote

Looking for a way to use up all that fall fruit? Try this simple compote for an all-natural sugar fix. Serve with ice cream, fresh whipped cream, or angel food cake for some extra decadence.

28. Healthier Coconut Macaroons

Macaroons may not be the first thing that comes to mind on Turkey Day, but that doesn't mean you can't make these coconutty balls. And they're so (so!) much easier to make than pie.

Cranberry Pear Crisp Photo: Katie at the Kitchen Door 29. Cranberry-Pear Crisp

Combine two favorite fall fruits and top with a crispy sugary crust for the perfect blend of tart and sweet. It also looks gorgeous, and anyone can make it, even novice bakers.

30. Fruit Salad with Lemon-Lavender Syrup

Peaches, plums, and cherries, oh my! This sophisticated fruit salad gets kicked up a notch with a lemon-lavender syrup. The perfect light dessert.

31. Baked Apples

You might need to wait a few hours after dinner to have room to enjoy these warm, gooey, oat-stuffed apples. Regardless, they're the perfect way to warm up after that mid-afternoon nap.

32. Apple Cider Margaritas

What better way to kick off the festivities than a nice, stiff drink? Try this fall take on a traditional summer cocktail. “An apple a day” applies to apple cider too, right?

33. Peach Rosemary Crisp

You’re in for a real treat with this dessert combining the natural sweetness of juicy peaches with a savory twist. A welcome substitute for classic apple crisp.

34. Hot Mulled Wine

Wine is always a winner—let's be honest. But wine slightly warmed with lots of awesome fall spices? That's a Thanksgiving victory for sure.

33 Vegetarian Thanksgiving Recipes Made With Real Food (Not Tofurkey)

Vegetarians at a family Thanksgiving dinner are accustomed to getting the stink eye, the exasperated sigh, and the classic, “I think these mashed potatoes are meat-free…oh wait, I used chicken stock.” On a day that emphasizes indulgence to the point of a bellyache, those who choose to avoid meat are often the odd ones out. Instead of complaining, vegetarians just grin, bear it, and fill up on not-so-satisfying green bean casserole, dinner roles, and pumpkin pie.

Not so this year. Here are 33 of our favorite vegetarian main dishes that are far from boring, tasteless, or the dreaded (and oft-joked about) Tofurkey. A meat-free meal can be just as rich and scrumptious as any classic Thanksgiving dish. Plus, think of all the time you’ll save when prepping, brining, cooking, basting, and stuffing the turkey is out of the picture!

Pumpkin Pot Pie Photo: Earthy Feast

1. Pumpkin Pot Pie

The classic chicken pot pie goes vegetarian and seasonal in this spotlight-stealing dish. Instead of meat, roasted pumpkin, carrots, celery, and kale take center stage. White kidney beans give the dish some protein, too. Make the crust a tiny bit healthier by opting for whole-wheat flour and going easy on the Parmesan cheese.

2. Butternut Squash Baked Risotto

This dairy-free risotto uses olive oil and low-sodium broth, not butter and cream, to achieve a rich consistency. With four cups of butternut squash and an entire bunch of kale, this baked dish is an easy way to get your veggies on Thanksgiving Day. Skip the grated parm to make this meal totally vegan.

3. Walnut-Stuffed Portobello Mushrooms

Toasty walnuts, breadcrumbs, garlic, and sage transform these giant ‘shrooms into a rich, filling meal. Vegan cheese means this bad boy is perfect for vegans gathering around the Thanksgiving table.

4. Stuffed Thanksgiving “Burger”

Eating a burger on Thanksgiving—sacrilege, or genius? We say the latter. This all-veggie patty is made from lentils, mushrooms, hazelnuts, cranberries, sage, and thyme. It’s just like a traditional Thanksgiving dinner, only on a bun.

Swiss Chard, Sweet Potato, and Feta Tart Photo: The Flour Sack

5. Swiss Chard, Sweet Potato, and Feta Tart with Teff Crust

This beautiful, healthy tart will definitely upstage the turkey on your Thanksgiving table. Sweet potatoes, onions, garlic, Swiss chard, and Feta cheese hit their stride when tucked into a whole-wheat and teff crust.

6. Quinoa-Stuffed Acorn Squash Rings

These golden rings of squash look like mini suns filled with a seasonal quinoa mixture. Perfect for a chilly late-fall dinner, right? With cranberry, sage, apple, maple syrup, and apple, the quinoa filling hits all of the autumnal high notes.

7. Mushroom and Barley Pie

Like a pot pie, this dish is made from layers of pastry wrapped around a tasty filling. Since pastry is by definition made from tons of butter, lighten up the filling by using part- or all-skim ricotta and going easy on the butter and olive oil.

8. Sweet Potato Gnocci with Brown Butter-Balsamic Sauce

Who said Thanksgiving dinner had to be a meat and potatoes affair? This creative, Italian-inspired dish is a good example of why breaking with the past can be smart (and delicious). Filling, rich gnocci are a good substitute for traditional rib-sticking fair.

9. Pumpkin and Black Bean Casserole

For a healthy, veggie-rich dish, look no further than this fall-themed casserole. Pumpkin balances out the black beans, corn, canned tomatoes, and assortment of flavorful spices. Since it comes together in just 20 minutes, you can prep this dish, toss it in the oven, and then head out for a game of pre-dinner touch football.

Warm Autumn Tart Photo: Green Kitchen Stories

10. Warm Autumn Tart

Set a sophisticated tone on Thanksgiving Day with this veggie-loaded tart. Colorful carrots, red onions, sweet potatoes, Romanesco, mushrooms, and kale come together to make a dish as healthy as it is beautiful. With a crust made of chickpea and almond flour, this tart is ideal for gluten-free eaters.

11. Vegetarian Vegetable Stew

Those who are serious about getting their veggies on Thanksgiving should bookmark this fresh stew recipe. Combine onion, carrot, celery, Portobello mushrooms, white mushrooms, garlic, tomatoes, potatoes, peas, and parsley to make this hearty, surprisingly filling vegetable soup.

12. Roasted Vegetable Galette

Put veggies front and center with this rustic, free-form vegetable tart. Colorful carrots, parsnips, butternut squash, and shallots provide plenty of flavor (and beta-carotene), while the goat cheese crumbles give this dish a salty, rich finish. Experiment with a whole-wheat crust to add some fiber into the mix.

13. Chickpea Roast with Sherry Sauce

Somewhere between a pastry and a meatless version of meatloaf, this impressive veggie main dish will keep vegetarians full on Turkey Day. Chickpeas, whole-wheat breadcrumbs, walnuts, mushrooms, and garlic give the filling a rich, distinctive flavor with plenty of protein.

14. Vegetarian Shepherd’s Pie with Garlic Mashed Potatoes

With spaghetti squash instead of ground beef as its base, this shepherd’s pie is primed for a healthy makeover. Lentils, carrots, celery, and mushrooms up the vegetable ante, while a goat cheese-infused mashed potato topping adds some indulgent Thanksgiving flavor.

Quinoa Stuffing with Apple, Sweet Potato, and Hazelnuts Photo: Fresh Family Cooking

15. Quinoa Stuffing with Apple, Sweet Potato, and Hazelnuts

For a side dish that’s filling enough to serve as a main course, look no further. Protein-rich quinoa and hazelnuts provide protein and fat, while sweet potatoes and apples lend this dish fiber and lots of fall flavor.

16. Pumpkin and Sage Ravioli

Mix things up with fresh, homemade ravioli filled with seasonal ingredients. The pumpkin puree, fresh sage, ricotta cheese, and nutmeg toe the line between savory and sweet. Serve ‘em with a bit of melted butter and a thin sprinkling of Parmesan cheese.

17. Stuffed Portobello Mushrooms

Who needs meat when you can eat rich, meaty Portobello mushrooms instead? Stuffing them with sautéed tomatoes, onions, mushrooms, spinach, and a sprinkling of goat’s milk Feta cheese turns these veggies into a full-on meal.

18. Apple Sage Chickpea Burgers

Once again proving that burgers are totally acceptable Thanksgiving fare, these chickpea veggie patties will probably steal the show. In addition to being protein-rich and low in fat, these burgers are fit to burst with autumn flavor thanks to the apples, sage, and onions.

Thai-Spiced Pumpkin Soup Photo: 101 Cookbooks

19. Thai-Spiced Pumpkin Soup

Spice things up at the dinner table by serving—gasp!—soup as a main dish. For an elegant yet filling soup, you can’t go wrong with this flavorful dish made with just six ingredients.

20. Curry-Stuffed Delicata Squash

Indian flavors on the Thanksgiving table? It’s not as strange as it sounds, we promise. Stuff delicata squash with basmati rice, lentils, shredded coconut, raisins, sunflower seeds, and of course, fresh curry powder. It’s a little bit exotic, a little bit non-traditional, but definitely delicious.

21. Pumpkin Chili with Black Beans and Garbanzo Beans

Everyone’s favorite winter meal gets the royal treatment in this festive chili recipe. Instead of ground beef, this version uses chickpeas and black beans, as well as pumpkin puree and canned tomatoes. Don’t forget to serve with cornbread!

22. Kale and Cauliflower Tart with a Cheddar Crust

What happens when you cross a Chicago-style pizza with a vegetable quiche? You get a deep-dish, satisfying vegetable tart that’s impressive enough for Thanksgiving dinner. The healthy cauliflower, onion, tomato, and kale filling plays off the cheddar-infused crust, creating a decadent, veggie-rich main dish.

23. Forest Floor Mushroom-Oat Risotto

No, this recipe isn’t named “forest floor” because it involves leaves, sticks, or anything the cat might drag in. Instead, it calls for two types of mushrooms (with the option to add extra varieties, including wild strains known to be safe), plenty of sage and rosemary, and steel-cut oats. If you’re not familiar with making risotto, it’s worth experimenting before the big day to get the slightly tricky technique down.

Maple Tempeh with Herbed Quinoa Photo: Nutrition Stripped

24. Maple Tempeh with Herbed Quinoa

Like olives and anchovies, tempeh seems to fit in the “hate it or love it” category. If you’re a fan, this richly flavored dish is ideal for the dinner table. Marinate tempeh in maple syrup, olive oil, and thyme, and then bake. When it’s ready, serve on a bed of herby, garlicky quinoa for a protein-rich vegan meal.

25. Rustic Vegetable Soup with Red Beans and Potatoes

Let soup take a front-and-center role by serving this veggie dish as a main on Thanksgiving Day. Instead of turkey, this recipe features kidney beans, potatoes, carrots, mushrooms, and spinach. It’s a warming, filling way to get your veggies for sure.

26. Vegetable Lasagna Casserole

Casserole doesn’t exactly scream “special occasion dinner,” but this one-bowl meal will make a convert out of any skeptic. Featuring zucchini, carrots, eggs, salsa, and cheese, this Tex-Mex inspired dish is basically a vehicle for vegetables.

27. Festive Chickpea Tart

This veggie-rich seasonal tart looks complicated (aka impressive), but it’s pretty simple to whip together. Save yourself a step by spreading the topping (made of ground chickpeas, cranberries, spinach, sage, walnuts, rolled oats, tamari, and celery, among other ingredients) on a pre-made whole-wheat piecrust. Or go full DIY and make your own from scratch.

28. Lentil Walnut Apple Loaf

If the word “meatloaf” still brings to mind scary cafeteria mystery meat, it’s time to revisit the concept with this filling vegan version. Lentils, toasted walnuts, ground flax, carrot, celery, apple, raisins, and breadcrumbs make this meat-free loaf positively healthful. Top with a sweet-n-sour balsamic-apple glaze.

29. Stuffed Kabocha Squash with Quinoa and Chickpeas

These roasted gourds loaded with leeks, quinoa, chickpeas, currants, and spices are bound to satisfy vegetarians, vegans, and meat-eaters alike. The best part? It’s basically quinoa salad in an edible bowl, so there are fewer dishes to wash at the end of the night!

Butternut Squash and Kale Stuffed Shells Photo: The Corner Kitchen

30. Butternut Squash and Kale Stuffed Shells

What happens when you combine an Italian classic and a Thanksgiving classic? You get these delicious, healthy, totally main course-worthy stuffed shells. Butternut squash adds moisture and flavor, so it’s possible to cut down on the cheese for a healthier dish.

31. Sweet Potato, Onion, and Fontina Tart

This rustic tart combines all the colors (and flavors) of fall. It’s a beautiful dish that will surely tempt even the non-vegetarians in the room. When assembling it, alternate rings of sweet potatoes and onions to make a pretty (and yummy) bulls-eye pattern.

32. Chermoula Eggplant with Bulgur and Yogurt

Leave it to the New York Times to get really creative with vegetarian Thanksgiving dishes. This Middle Eastern eggplant dish is totally non-traditional, featuring bulgur wheat salad, raisins, olives, almonds, and a drizzle of Greek yogurt on top.

33. Mushroom and Stout Pot Pies with Sweet Potato Crusts

A savory pie that combines beer, sweet potatoes, and mushrooms is the perfect melding of decadence and healthy food. As a Thanksgiving entrée, this dish is pretty simple and speedy, with just a few steps and minimal dishes to wash.

The Coin-Sized Gadget That Stops You From Losing Anything

Stuff We Love: TrackR Bravo TrackR Bravo

Tell us if this sounds familiar: You’re headed out the door in the morning, so you run through a mental checklist: phone, wallet, keys. Wait, keys? Panic sets in. They aren’t in your pocket, so you check every surface in your home. They’re still nowhere to be found, so you start pacing and strain to think the last time you remember seeing them. Ten minutes goes by—now you’re late and annoyed when you finally find them in the pockets of yesterday’s jeans.

The TrackR Bravo, a quarter-sized Bluetooth tracking device, eliminates this whole situation. Attachable to almost anything you’d want to keep a handle on, you can loop it onto key chains, slip it inside your wallet, or stick it to the side of your car (mag-neato, eh—it's magnetized). The device syncs up with an app that tells you how far you are from your misplaced item and can then ring it, which is especially helpful when said item is at the bottom of a pile of dirty clothes. Plus, it works backward too—so if you’ve lost your phone, press the button on the TrackR and it’ll give your cell a ring. Yesterday's jeans, you've met your match.
