If you love avocado toast, and the thought of biting into a grilled cheese gets you weak in the knees, here's your next favorite meal: melted cheese, avocado, and sun-dried tomatoes sandwiched between two slices of whole-wheat bread. No butter necessary. Use a touch of extra-virgin olive oil to fry up the new weeknight staple. You're welcome.

Sun-Dried Tomato and Avocado Grilled Cheese

Makes: 1 sandwich
​Ready in: 15 minutes

INGREDIENTS

1 teaspoon extra-virgin olive oil, divided
2 slices whole-wheat bread
2 slices sharp cheddar cheese
1/2 avocado, sliced
6 sun-dried tomatoes

DIRECTIONS

1. Heat a pan over medium-low heat. Brush 1/2 teaspoon olive oil on one side of a bread slice and place in the pan oil side down.

2. Top with cheese, avocado, tomatoes, and remaining slice of bread.

3. Lightly brush second slice of bread with remaining 1/2 teaspoon oil. Cook for about 2 minutes or until bread turns golden brown and cheese begins to melt.

4. Flip, and cook on the other side until bread is toasted and cheese is completely melted.

Cucumber Guacamole Rolls

Think outside of the guacamole-as-a-dip box and enjoy your favorite avocado mash as a base in this quick rollup. These bites are made with simple vegetables, fruit, herbs, and spices, which means they're full of flavor and can probably be made with food you have in your kitchen right now. We think they'd be just as well-recieved as appetizers at a cocktail party as they would for kids at snack time.

Cucumber Guacamole Rolls

Recipe by: Glow Kitchen
Makes: 8-10 servings
​Ready in: 15 minutes

INGREDIENTS

1 avocado
1/2 lemon, juiced
1 lime, juiced
1 clove garlic, minced
1/2 shallot, diced
3-5 cherry tomatoes, diced
Handful cilantro, finely chopped
Salt
Pepper
Dash cumin
1 large cucumber, sliced lengthwise into 8-10 thin strips

DIRECTIONS

1. Cut the avocado in half and scoop insides into a bowl.

2. Add lemon and lime juice, then use the edge of a fork to mash until creamy but still a bit chunky. Add garlic, shallot, tomato, cilantro, salt and pepper to taste, and cumin and stir to combine.

3. Scoop about 1 tablespoon guacamole onto the end of each cucumber slice.

4. Roll cucumber around the guacamole, creating bite-sized rolls.

5. Seal shut with a toothpick or pop into your mouth right away.

Oil or cooking spray
6 slices bacon
9 eggs
1/4 cup milk or water
Salt
Pepper
1 large zucchini, shredded (about 3 cups)
1/2 cup shredded cheese (optional)

DIRECTIONS

1. Preheat oven to 400 degrees. Liberally grease a muffin tin with oil or cooking spray.

2. In a small frying pan, cook bacon until crispy. Transfer to a paper towel-lined plate to collect the excess fat and let cool. Chop into small pieces.

3. In a medium bowl, beat eggs until evenly combined. Add milk and salt and pepper to taste. Stir to combine.

4. Add zucchini, cheese (if using), and chopped bacon. Stir to combine.

1 egg

1 tablespoon coconut oil

Handful basil leaves, torn

DIRECTIONS

1. Whisk egg well in a small bowl. Combine with sweet potato, olive oil, and salt and pepper to taste, mixing well.

2. In a large pan, melt coconut oil over medium heat. Spoon potato mixture 1 heaping tablespoon at a time into pan and pat down into a flat patty about the size of your palm. Cook for 4 minutes on each side until golden and crispy.

1. Twenty-four hours before you plan on eating: Mix 1 tablesoon olive oil, chilies, garlic, honey, vinegar, salt, cumin, and cinnamon together in a small bowl. Pour into a large Ziploc bag.

2. Rinse chicken tenders, pat dry, and trim any fat, then place in the bag. Close the bag and squish around to coat chicken with marinade. Refrigerate for eight to 24 hours.

3. When ready to cook: Preheat oven to 400 degrees.
In a large baking pan, toss together remaining 2 tablespoons olive oil, sweet potatoes, and an additional sprinkling of sea salt. Roast for 30 minutes, stirring once.

4. Add marinated chicken tenders to the sweet potato pan, and continue to bake for 10 minutes, until chicken is cooked through (no pink in the middle) and juices run clear.

Makes: 25 bites
​Ready in: 20 minutes

INGREDIENTS

4 cups rolled oats
1 1/2 cups raw sunflower seeds
1 cup banana chips, crushed
1/2 cup dried blueberries
2 teaspoons cinnamon
1 cup chocolate chips
1 cup sunflower seed butter
1/2 cup agave nectar

DIRECTIONS

1. Combine oats, sunflower seeds, banana chips, blueberries, cinnamon, and chocolate chips in a bowl. Add sunflower seed butter and agave and stir until well combined.

2. Refrigerate until relatively firm, about 20 minutes.

3. Using a teaspoon to measure, roll mixture into balls. Store in the fridge (or freezer) in an airtight container.

Not surprisingly, if a dog's saliva finds its way into your mouth, nose, ears, or eyes (a gross image, but it happens), there's a chance you'll end up with some kind of gastrointestinal disease. It makes sense when you consider dogs aren't the cleanest (reminder: They eat stuff off the ground), and they're home to a bunch of bacteria we're not used to dealing with.   1. Dog poops.

  4. Human ingests poop particles (delish!).

Tropical Chia Seed Pudding Recipe

Makes: 4 servings
​Ready in: 15 minutes

INGREDIENTS

2 cups low-fat coconut milk
1/2 cup roughly diced pineapple
1/2 cup roughly diced mango
1/4 cup unsweetened coconut flakes
1/2 cup chia seeds
1 tablespoon agave syrup (optional)
2-3 tablespoons additional chopped fruit (we used pineapple, mango, and strawberries)
Coconut flakes, for garnish

DIRECTIONS

1. Combine coconut milk, pineapple, mango, and coconut flakes in a blender or food processor until smooth.

2. In a medium bowl, combine chia seeds, coconut milk mixture, and agave syrup, if using, and stir until fully combine. Cover and refrigerate for a couple hours up to overnight.

3. When ready to serve, garnish with additional diced fruit and coconut flakes.

The Major Setbacks I Thought I'd Never Recover From (and How I Did)

No Regrets With Susie Moore “Susie, the boss would like to see you.” My heart seized in my chest.

“This is it!” I thought to myself. I’m getting promoted!

I was naive, ambitious, and a tad cocky when I started out in my career. I joined my first company in a receptionist role and I was desperate to get into sales. I spent all my time with the sales team, observed them, helped their clients, and learned everything I could about the craft so I could do it myself. “They have to be noticing my initiative!” I thought smugly—while totally ignoring the administrative work I was supposed to be doing.

So when my manager wanted to see me, I was ready. I strutted up the stairs, prepared to gracefully accept my promotion. But as soon as my butt hit the chair his words slapped me in the face: “Susie, we’re letting you go. It’s not working out.” Whaaaaat?!?! My whole body felt numb. I couldn’t breathe. I wanted to cry.

Sometimes life will deal you a heartbreaking blow. Sometimes we don’t know how we’re going to make it through the day.

Getting fired was a massive wake-up call for me. I was shocked and deeply hurt by the rejection. In that moment, I thought I would never recover. But of course I did. The recruiter who originally placed me in the role saw the sales potential in me and hired me at her firm. That same week I was fired from one job I started another, and so began my sales career!

When things hurt us, we often think we'll never recover. Sometimes it feels like we’ve been pushed off a cliff. Sometimes life will deal you a heartbreaking blow. Sometimes we don’t know how we’re going to make it through the day. But keep in mind that you can cope and eventually come out stronger on the other side. Here's proof.

9 Setbacks I Survived

1. Getting a Divorce

Getting divorced in my early twenties was scary, confusing, and painful. But even in my deep fog and on the worst days, I had faith I would be OK. I knew there was nothing original about what I was going through. Heck, half of married folks out there would (statistically) be in my shoes one day! My logical side also knew there was more than just one person in this world who could make me happy. I was right.

Love is stronger than death. And love never leaves you.

2. Losing a Parent

I’m not sure you ever get past losing a parent. But grief changes shape over time. There is one thing I know for sure: I still have a father, just not in physical form. My dad, who was an author, is with me in the way I write, the books I read, and the knack I have to parallel park. Love is stronger than death. And love never leaves you.

3. Screwing Up at Work

When we make a mistake at work we often think it’s the end of the world. It’s not. I made such a big revenue-reporting mistake once that the president of my company called me to verify my numbers. Was I mortified? Yes. Was it career ending (or even harmful)? Nope. It was forgotten the moment something more important happened.

4. Moving Away From My Family

I left home when I was 18 and I haven't lived in the same country as my family since. I still feel sad about this sometimes. But we are an adaptable species and we get used to things. Every decision has a price. I try to see my family when I can and make the most of the independent life I’ve created. On the plus side, distance means we rarely fight and our time together feels meaningful.

5. Losing the Structure of a 9-to-5 Job

It feels very weird when you leave a desk job and start working for yourself. In the first few weeks I would walk aimlessly from room to room in my apartment. I couldn’t decide when to shower. The blazers and heels in my closet mocked me. For a long time I felt less important than I used to be. I was lost. I felt like a naughty kid skipping school. Creating your own structure as an entrepreneur takes time, self-awareness, and patience. But you do get there.

6. Growing Apart from Friends

This happens a lot, especially as you get older. It’s OK. Here's a little secret: Not all friendships are meant to last. As Baz Luhrmann's “sunscreen song” suggests, “Understand that friends come and go, but to a precious few you should hold on.” You know your precious few. Prioritize them.

7. Blowout Fights with Siblings

Relationships with relatives are rarely a walk in the park. The deeper you know someone, the more likely you are to see their cracks, their scars, their issues. No family is immune to challenges. I once went several years without speaking to my sisters. The sadness weighed heavily on me. But if you're open, life can have a way of bringing people back together. Don’t give up. Give people space. And love and accept yourself when you feel hurt and rejected.

8. My First Experience With Online Haters

When I first started writing about my personal experiences I was shocked at the venom of online commenters. I wrote a piece on my divorce and was called a slut, a gold digger, scum—mostly by men who made wild assumptions. I couldn’t believe it! I called my mum for reassurance.

For a time I wanted to stop writing altogether. But why? Because people who don’t know me made some uninformed opinions? Hey, everyone’s allowed to have a voice. When I got over this I feel fueled to write even more—people will say what they will regardless. I now find many of my less complimentary comments the most amusing and interesting. Acceptance is a beautiful thing.

The Takeaway

In my thirties, I've come to define maturity as the wisdom to control certain emotions that get in the way of seeing the real world. The real world can be harsh, yes. It’s full of uncertainty, change, and loss. But it’s full of gorgeous things too—love, family, adventure, forgiveness, growth, and courage.

In the Tao Te Ching, considered one of the wisest books ever written, Lao-Tzu writes, “Hidden in any misfortune is good fortune.” What can your current misfortune be uncovering for you right now?

Vegan Quinoa-Stuffed Peppers

Recipe by: Kat Robson
Makes: 4 servings (8 stuffed peppers)
​Ready in: 30 minutes

INGREDIENTS

1 1/2 tablespoons olive oil, plus more for pan
1 small onion, diced
2 cloves garlic, minced
2 tablespoons chili powder
2 teaspoons cumin
2 teaspoons paprika
Salt
Freshly ground black pepper
1 can (15 ounces) black beans, rinsed and drained
3 cups chopped baby spinach
3 cups cooked quinoa
1 can (15 ounces) diced tomatoes
1/4 cup chopped fresh cilantro
4 bell peppers, halved lengthwise

DIRECTIONS

1. Preheat oven to 375 degrees. Brush a thin layer of olive oil across the bottom of a large baking dish.

2. In a large sauté pan, heat oil over medium heat. Add onions and cook until soft and fragrant, about 5 minutes.

3. Stir in garlic, chili powder, cumin, and paprika, season with salt and pepper, and cook for another 1 to 2 minutes.

4. Add black beans, spinach, quinoa, and tomatoes, and mix together to fully combine. Cook until mixture is heated through, about 5 minutes. Stir in cilantro.

5. Fill peppers with quinoa stuffing. Arrange peppers in prepared baking dish and cover with tinfoil. Bake for 25 minutes. Serve.

Kayla Itsines Is Finally Talking About the Big Problem With Her Bikini Body Guides

Instagram fitness star Kayla Itsines is known for her Bikini Body Guides (often called #BBG), but now she's having second thoughts about choosing that name for her workout plan.

"I originally called it 'Bikini Body Guides' because when I asked my clients what their goals were, 99 percent said at some stage that they just wanted 'to feel comfortable in a bikini,'" Itsines wrote in a post on Instagram. "Then I started training more and more women from all over the world and realized that people don't want to JUST feel 'comfortable' in a bikini, they want to feel strong, empowered, they want to make friends, be a part of a team. They want to be confident, happy, and, most importantly, healthy."

That's why she called her new app Sweat With Kayla, moving away from a specific, idealized body type. One thing she hasn't changed? Her marketing strategy. The above close-up shot of her abs accompanied her explanation of the name change. It's a small step, but we’re excited Itsines (and many others) are finally ditching the idea that we're all working out to get a "bikini body."

The veggie has a neutral taste, so these "zoodles" take on the flavor of the sauce they're tossed in (we went with a simple garlic and olive oil mixture here). To prepare zucchini noodles, use a spiralizer for curly noodles or a vegetable peeler to for fettuccini-style ribbons. The best part? You can prep the whole dish in one bowl.

Zucchini Noodles

Makes: 2 servings
​Ready in: 15 minutes

INGREDIENTS

2 zucchini, spiralized or sliced into ribbons with a vegetable peeler
2 Roma tomatoes, diced
1/2 small bell pepper, diced
1/4 cup olives, chopped
1/4 cup pine nuts
1 tablespoon fresh basil, chopped
1 small clove garlic, crushed
1-2 tablespoons olive oil
Salt
Pepper
Fresh lemon juice

DIRECTIONS

1. Toss all ingredients in a bowl, adding salt, pepper, and lemon juice to taste. Serve.

Loaded Southwestern Stuffed Sweet Potatoes

Recipe by: Eat Spin Run Repeat
Makes: 2 stuffed sweet potatoes
​Ready in: 1 hour

INGREDIENTS

2 medium sweet potatoes, scrubbed clean
1/2 cup diced bell peppers
2/3 cup black beans, rinsed and drained
1/2 cup corn (frozen, fresh, or canned)
1/8 teaspoon ground cumin
1/4 teaspoon chili powder
2 limes, juiced
Salsa
1/2 avocado, diced
Cilantro, to garnish (optional)

DIRECTIONS

1. Preheat oven to 400 degrees. Use a fork to prick holes in potatoes. Place on a foil-lined baking sheet and bake for 45 to 50 minutes or until flesh is soft.

2. Combine peppers, black beans, corn, cumin, chili powder, and lime juice in a bowl. Set aside to let flavors develop.

3. Remove sweet potatoes from oven and let them cool for a few minutes. Cut slits down each lengthwise, and pull apart to create a well for fillings.

4. Spoon 2 tablespoons of the pepper and bean mixture into each potato. Top with salsa, avocado and cilantro, if desired.
