These Middle Eastern-inspired meatballs combine lean ground turkey and grated sweet potato for a filling, savory yet sweet dish. Serve with couscous and Greek yogurt or hummus for a complete, healthy dinner or brown bag lunch. - Preheat oven to 375 degrees.
- Mix all ingredients except oil together in a bowl, adding salt and pepper to taste. Form mixture into meatballs.
- Heat a drizzle of olive oil in a skillet over medium heat. Pan-fry meatballs about 5 minutes, or until browned on all sides. Finish in the oven until cooked through, about 6 minutes.
