5-Minute Roasted Pepper Sauce

Makes: 6 servings
Ready in: 5 minutes
INGREDIENTS
1 avocado
12-ounce jar roasted peppers, drained (or roast fresh ones at 500 degrees for 15-20 minutes)
2 cloves garlic, peeled
salt and pepper, to taste
DIRECTIONS
Scoop out the avocado meat and place all of the ingredients in a food processor and blend until smooth. Use immediately or place in refrigerator for up to one week.
